Taco Amigo

CORE Architecture was excited to partner in the revitalization of a Utah Valley favorite—Taco Amigo in Pleasant Grove. A beloved local institution, Taco Amigo underwent a full remodel and building addition to enhance the customer experience and support the restaurant’s continued growth. The upgraded location now serves 70% more customers per hour, thanks to an efficient layout, expanded drive-thru, and inviting patio dining area.

The redesigned dining room offers a fresh, contemporary atmosphere while preserving the charm and heritage of the original space. CORE carefully balanced modern upgrades with nostalgic elements, ensuring the space feels both new and familiar to long-time patrons. The building’s front and primary entrance were strategically reoriented to maximize visibility and brand recognition from both directions of the busy state highway—an important connector between Utah’s principal communities.

This remodel not only improves daily operations but also positions Taco Amigo for long-term success. The improved layout and increased capacity allow for faster service and greater customer comfort, while the enhanced curb appeal strengthens the restaurant’s identity within the community.

By honoring the original structure and elevating the dining experience, CORE Architecture delivered a project that supports business growth and reflects Pleasant Grove’s evolving landscape. Taco Amigo’s successful re-opening is a testament to the power of thoughtful design in shaping community-driven, legacy-rich spaces.
